- 12 oz pasta (bowtie or rotini)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup black olives, sliced
- 1/2 cup mozzarella cheese, cubed
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Cook the pasta according to package directions. Drain and let cool.
- Combine the cooled pasta, cherry tomatoes, cucumber, red bell pepper, red onion, black olives, mozzarella cheese, and parsley in a large bowl.
- Whisk together olive oil, red wine vinegar, Italian seasoning, salt, and pepper in a small bowl.
- Pour the dressing over the pasta salad and toss to combine.
- Refrigerate for at least 30 minutes before serving to let flavors meld.
