Description

A vibrant, colorful bowl of Zesty Italian Pasta Salad, perfect for summer gatherings and easy weeknight dinners.


Ingredients

  • 12 oz pasta (bowtie or rotini)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup black olives, sliced
  • 1/2 cup mozzarella cheese, cubed
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package directions. Drain and let cool.
  2. Combine the cooled pasta, cherry tomatoes, cucumber, red bell pepper, red onion, black olives, mozzarella cheese, and parsley in a large bowl.
  3. Whisk together olive oil, red wine vinegar, Italian seasoning, salt, and pepper in a small bowl.
  4. Pour the dressing over the pasta salad and toss to combine.
  5. Refrigerate for at least 30 minutes before serving to let flavors meld.
