Ingredients

- 1 head of cabbage, chopped
- 2 carrots, diced
- 1 onion, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 teaspoon thyme
- 1 teaspoon oregano
- Salt and pepper to taste
- Olive oil (or your favorite cooking oil)
Instructions
- Heat some oil in a large pot over medium heat until it shimmers.
- Add the diced onion, minced garlic, diced carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables are softened.
- Stir in the chopped cabbage, cooking for another 3-5 minutes until it wilts.
- Pour in the can of diced tomatoes (juice included), then add the vegetable broth, thyme, oregano, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 30-40 minutes until the vegetables are tender, stirring occasionally.
- Taste and adjust seasoning if necessary, then serve hot in your favorite bowls.
