Description

Delightful and moist blueberry muffins that are easy to make and perfect for any occasion.


Ingredients

  • 2/3 cup white sugar
  • 1 large egg
  • 1/2 cup vegetable oil OR melted butter
  • 1/3 cup milk
  • 1 teaspoon vanilla
  • 1 1/4 cup all-purpose flour (or gluten-free mix)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup sour cream (or yogurt)
  • 1 cup blueberries
  • About 1 tablespoon white sugar for topping (optional)

Instructions

  1. Preheat your oven to 375ºF and place eight muffin liners in the pan.
  2. Combine the sugar, egg, oil, milk, and vanilla in a large bowl.
  3. Add the flour, baking powder, and salt, mixing until no lumps remain.
  4. Stir in the sour cream, then fold in the blueberries, saving some to sprinkle on top.
  5. Distribute the muffin batter into the prepared muffin tin.
  6. Sprinkle saved blueberries on top and dust with white sugar if desired.
  7. Bake for 25 minutes or until a toothpick comes out clean.
  8. Store in a sealed container while warm to retain moisture.

Notes

For extra flavors, try adding lemon zest, nuts, cinnamon, or chocolate chips to the batter.
