Description

A warm and hearty stuffed pepper casserole filled with ground beef, rice, bell peppers, and topped with cheese, perfect for cozy evenings.


Ingredients

  • 1 pound ground beef
  • 1 cup uncooked rice
  • 2 cups bell peppers, diced
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup shredded cheese
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups beef broth

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef with the chopped onion and minced garlic until fully cooked. Drain excess fat.
  3. Stir in the rice, diced tomatoes, beef broth, Italian seasoning, diced bell peppers, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for about 10 minutes until the rice is cooked.
  5. Transfer the mixture to a greased baking dish, top with shredded cheese, and bake for 20-25 minutes until the cheese is melted and bubbly.
  6. Let it cool for a few minutes before serving.

Notes

Make ahead by prepping the casserole mixture a day in advance. Store in the fridge before baking.
