- 1 pound ground beef
- 1 cup uncooked rice
- 2 cups bell peppers, diced
- 1 can diced tomatoes (14.5 oz)
- 1 cup shredded cheese
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 cups beef broth
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, brown the ground beef with the chopped onion and minced garlic until fully cooked. Drain excess fat.
- Stir in the rice, diced tomatoes, beef broth, Italian seasoning, diced bell peppers, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for about 10 minutes until the rice is cooked.
- Transfer the mixture to a greased baking dish, top with shredded cheese, and bake for 20-25 minutes until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
