Description

A classic Southern macaroni salad that’s creamy, comforting, and perfect for picnics and potlucks.

Ingredients

Scale
  • 8 ounces elbow macaroni
  • 1 cup mayonnaise
  • 2 tablespoons yellow mustard
  • 1 tablespoon apple cider vinegar
  • 1/2 cup diced celery
  • 1/2 cup diced red bell pepper
  • 1/4 cup finely chopped red onion
  • 1/2 cup sweet pickles, diced
  • Salt and pepper to taste

Instructions

  1. Cook the elbow macaroni according to package instructions, then drain and rinse under cold water.
  2. In a large bowl, combine the mayonnaise, yellow mustard, apple cider vinegar, salt, and pepper. Stir until smooth and creamy.
  3. Add the cooled macaroni, diced celery, red bell pepper, onion, and sweet pickles to the bowl.
  4. Gently mix everything together until well combined.
  5. Taste and adjust the seasoning if needed.
  6. Refrigerate for at least 1 hour before serving.

Notes

This salad tastes even better after a day in the fridge, making it perfect for meal prep. Consider swapping mayonnaise with Greek yogurt for a lighter option.
