Ingredients

  • 1 pound Italian sausage
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1 package tortellini (about 20 ounces)
  • 1 can diced tomatoes (14.5 ounces)
  • 2 cups spinach
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Add the Italian sausage, onion, and garlic to a slow cooker. Cook on high for about 120 minutes until the sausage is browned.
  2. Pour in the chicken broth, diced tomatoes, and heavy cream. Stir it all together.
  3. Add the tortellini and cook on low for another 30 minutes until tender.
  4. Stir in the fresh spinach and let it wilt for about 5 minutes.
  5. Season with salt and pepper to taste.
  6. Serve hot, topped with grated Parmesan cheese.
