- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups heavy cream
- 1 package tortellini (about 20 ounces)
- 1 can diced tomatoes (14.5 ounces)
- 2 cups spinach
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- Add the Italian sausage, onion, and garlic to a slow cooker. Cook on high for about 120 minutes until the sausage is browned.
- Pour in the chicken broth, diced tomatoes, and heavy cream. Stir it all together.
- Add the tortellini and cook on low for another 30 minutes until tender.
- Stir in the fresh spinach and let it wilt for about 5 minutes.
- Season with salt and pepper to taste.
- Serve hot, topped with grated Parmesan cheese.
