Ingredients

- 2 pounds boneless, skinless chicken breasts, sliced into thin strips
- 3 large bell peppers, sliced
- 1 large onion or 2 small onions, sliced
- 15 ounces diced tomatoes or salsa
- 1/3 cup fajita seasonings
- Salt & pepper to season the chicken
- 3/4 cup low-sodium chicken broth (for Instant Pot only)
Instructions
- Season the chicken strips generously with salt and pepper.
- Add the seasoned chicken, sliced bell peppers, onions, and diced tomatoes or salsa to the slow cooker.
- In a small bowl, combine the fajita seasonings and sprinkle it over the ingredients in the slow cooker.
- Stir everything to mix well.
- If using the Instant Pot, add the low-sodium chicken broth for moisture.
- Set your slow cooker to cook on HIGH for 2-3 hours or LOW for 4-6 hours.
- Once cooked, shred the chicken directly in the slow cooker or serve it in tender pieces.
- Pair with warm tortillas and your favorite toppings.
