Description

Warm and vibrant chicken fajitas cooked low and slow in a slow cooker, perfect for busy weeknights.


Ingredients

  • 2 pounds boneless, skinless chicken breasts, sliced into thin strips
  • 3 large bell peppers, sliced
  • 1 large onion or 2 small onions, sliced
  • 15 ounces diced tomatoes or salsa
  • 1/3 cup fajita seasonings
  • Salt & pepper to season the chicken
  • 3/4 cup low-sodium chicken broth (for Instant Pot only)

Instructions

  1. Season the chicken strips generously with salt and pepper.
  2. Add the seasoned chicken, sliced bell peppers, onions, and diced tomatoes or salsa to the slow cooker.
  3. In a small bowl, combine the fajita seasonings and sprinkle it over the ingredients in the slow cooker.
  4. Stir everything to mix well.
  5. If using the Instant Pot, add the low-sodium chicken broth for moisture.
  6. Set your slow cooker to cook on HIGH for 2-3 hours or LOW for 4-6 hours.
  7. Once cooked, shred the chicken directly in the slow cooker or serve it in tender pieces.
  8. Pair with warm tortillas and your favorite toppings.
