Ingredients

- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh cilantro, chopped
- 2 cloves garlic, minced
- 1 teaspoon red pepper flakes
- Salt and pepper to taste
- 2 pounds skirt steak
Instructions
- Whisk together the olive oil, red wine vinegar, parsley, cilantro, garlic, red pepper flakes, salt, and pepper in a bowl.
- Place the skirt steak in a resealable plastic bag and pour the marinade over the steak.
- Seal the bag and refrigerate for at least 120 minutes or overnight.
- Preheat your grill to medium-high heat.
- Remove the steak from the marinade and discard the marinade.
- Grill the steak for 4-5 minutes per side for medium-rare.
- Let the steak rest for 5-10 minutes before slicing against the grain.
