Description

A flavorful skirt steak marinated in a vibrant chimichurri sauce, perfect for gatherings and easy weeknight dinners.

Ingredients

Scale
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh cilantro, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 2 pounds skirt steak

Instructions

  1. Whisk together the olive oil, red wine vinegar, parsley, cilantro, garlic, red pepper flakes, salt, and pepper in a bowl.
  2. Place the skirt steak in a resealable plastic bag and pour the marinade over the steak.
  3. Seal the bag and refrigerate for at least 120 minutes or overnight.
  4. Preheat your grill to medium-high heat.
  5. Remove the steak from the marinade and discard the marinade.
  6. Grill the steak for 4-5 minutes per side for medium-rare.
  7. Let the steak rest for 5-10 minutes before slicing against the grain.

Notes

Marinating overnight enhances flavor. Slice against the grain for tenderness.
