Ingredients

  • 4 medium zucchinis
  • 1 pound ground beef
  • 1 cup diced tomatoes
  • 1/2 cup onion, diced
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the insides to create boats.
  3. In a skillet, heat olive oil over medium heat and sauté the onion and garlic until translucent and fragrant.
  4. Add the ground beef to the skillet and cook until browned, stirring occasionally.
  5. Stir in the diced tomatoes, Italian seasoning, salt, and pepper; let it simmer for a few minutes.
  6. Fill each zucchini boat generously with the savory ground beef mixture.
  7. Top each stuffed zucchini with a sprinkle of shredded mozzarella cheese for that extra creamy goodness.
  8. Place the stuffed zucchinis in a baking dish, cover with foil, and bake for 25-30 minutes.
  9. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
