- 4 cups kale, chopped

- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Heat olive oil in a large pot over medium heat. Add the sausage and cook until browned, breaking it apart as it cooks.
- Add the onion and garlic, sautéing until the onion is translucent and fragrant.
- Stir in the diced sweet potatoes and cook for another 5 minutes, allowing the edges to caramelize slightly.
- Pour in the chicken broth, bringing the mixture to a gentle boil.
- Reduce heat and let it simmer for 15-20 minutes, or until sweet potatoes are tender.
- Add the kale and thyme, cooking for an additional 5 minutes until the kale is wilted.
- Season with salt and pepper to taste before serving.
