- 1 garlic bulb
- 1 teaspoon olive oil
- 1 cup unsalted butter, at room temperature
- 3 tablespoons parsley, finely chopped
- 1 tablespoon rosemary, finely chopped
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon lemon juice
- 3 garlic cloves, roasted
Instructions
- Roast the garlic: Preheat your oven to 400°F. Remove the excess papery layers from the garlic bulb, cut the top off to expose the cloves, drizzle with olive oil, wrap in foil, and bake for 40 minutes.
- Cool: Allow the garlic to cool until safe to handle.
- Prepare the butter mixture: In a mixing bowl, combine room-temperature unsalted butter, parsley, rosemary, salt, pepper, lemon juice, and roasted garlic cloves.
- Smash and mix everything together until it becomes a smooth spread.
- Shape the butter: Transfer the mixture onto parchment and shape into a tube or rectangular log.
- Chill: Refrigerate the butter until firm, about 1-2 hours.
- Serve & enjoy: Slice portions and add to bread, pasta, meats, or fish.
Notes
This compound butter can last up to two weeks in the refrigerator and can be frozen for longer storage.
