Ingredients

  • 1/4 red onion, thinly sliced
  • 1/2 cup apple cider vinegar
  • 3 tablespoons sugar (or honey)
  • 1/4 cup water
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Fresh dill or parsley for garnish (optional)

Instructions

  1. Wash the cucumbers thoroughly. Slice them thinly—aim for about 1/8-inch thick.
  2. Combine the sliced cucumbers and red onion in a spacious bowl; toss gently.
  3. Whisk together the apple cider vinegar, sugar, water, and olive oil in a separate bowl.
  4. Pour the dressing over the cucumber and onion mixture, and gently toss to coat.
  5. Season with salt and pepper to taste, adjusting as needed.
  6. Sprinkle fresh dill or parsley on top before serving.
  7. Let it sit for about 10 minutes to allow the flavors to meld.
