Description

A creamy and cozy pumpkin soup perfect for chilly autumn evenings.


Ingredients

  • 2 cups pumpkin puree
  • 4 slices turkey bacon, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the turkey bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.
  2. Add the chopped onion to the pot and cook until translucent, about 5 minutes.
  3. Stir in the garlic, cumin, and cinnamon, cooking for another minute until fragrant.
  4. Add the pumpkin puree and broth, bringing the mixture to a gentle simmer.
  5. Allow the soup to cook for about 15-20 minutes.
  6. Blend the soup until smooth using an immersion blender or regular blender.
  7. Stir in the heavy cream and season with salt and pepper to taste.
  8. Serve hot, garnished with crispy turkey bacon and fresh parsley.
