- 2 slices of your favorite bread (sourdough, focaccia, or classic white)
- 1–2 tablespoons of pesto (store-bought or homemade)
- 2 slices of cheese (mozzarella or cheddar)
- Butter or olive oil for grilling
Instructions
- Spread a generous layer of pesto on one side of each slice of bread.
- Place cheese slices between the bread, pesto side facing the cheese.
- Heat a skillet over medium heat and add butter or olive oil, coating the bottom.
- Carefully place the sandwich in the skillet and grill until golden brown and the cheese is melted, about 3-4 minutes per side.
- Remove the sandwich from the skillet, cut in half, and serve warm.
Notes
For a crispier exterior, use a blend of butter and olive oil. Feel free to customize with different breads or vegetables.
