Ingredients

- 1 pound chicken thighs or breasts
- 1 cup rice
- 2 cups chicken broth
- 4 cloves garlic, minced
- 1 lemon, juiced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Olive oil
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Season chicken with salt, pepper, oregano, and thyme. Massage the spices into the meat for extra flavor.
- Add the chicken to the pot and cook until browned, about 5 minutes per side.
- Remove the chicken and set it aside.
- Add minced garlic to the pot, cooking until fragrant, about 1 minute.
- Add the rice to the pot and stir for a couple of minutes until slightly toasted.
- Pour in chicken broth and lemon juice, stirring to combine.
- Return the chicken to the pot, bring to a simmer, cover, and reduce heat to low.
- Cook for about 20 minutes or until rice is tender and absorbed all flavors.
- Fluff the rice with a fork, garnish with parsley, and serve warm.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. For a creamy texture, stir in sour cream or Greek yogurt at the end.
