One Pot Greek Chicken and Rice

Description

A comforting one-pot dish featuring tender chicken mingled with fragrant rice, garlic, and herbs, perfect for busy weeknights.


Ingredients

Scale
  • 1 pound chicken thighs or breasts
  • 1 cup rice
  • 2 cups chicken broth
  • 4 cloves garlic, minced
  • 1 lemon, juiced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Season chicken with salt, pepper, oregano, and thyme. Massage the spices into the meat for extra flavor.
  3. Add the chicken to the pot and cook until browned, about 5 minutes per side.
  4. Remove the chicken and set it aside.
  5. Add minced garlic to the pot, cooking until fragrant, about 1 minute.
  6. Add the rice to the pot and stir for a couple of minutes until slightly toasted.
  7. Pour in chicken broth and lemon juice, stirring to combine.
  8. Return the chicken to the pot, bring to a simmer, cover, and reduce heat to low.
  9. Cook for about 20 minutes or until rice is tender and absorbed all flavors.
  10. Fluff the rice with a fork, garnish with parsley, and serve warm.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. For a creamy texture, stir in sour cream or Greek yogurt at the end.
