A quick and easy one-pan meal featuring succulent kielbasa, tender veggies, and a sweet honey garlic sauce, perfect for family dinners.

- 1 pound Kielbasa
- 2 tablespoons Honey
- 3 cloves Garlic, minced
- 2 tablespoons Soy Sauce
- 1 each Bell Pepper (red & yellow)
- 1 cup Baby Carrots
- 1 pound Baby Potatoes
- 2 tablespoons Olive Oil
- 2 tablespoons Fresh Parsley or Green Onions
Instructions
- Preheat your oven to 400°F (200°C).
- Whisk together the honey, minced garlic, and soy sauce in a small bowl. Set aside.
- Spread the baby potatoes on a large baking sheet and drizzle with olive oil. Toss to coat and arrange in a single layer.
- Slice the kielbasa into bite-sized pieces and add to the baking sheet. Toss with the potatoes.
- Add the bell peppers and baby carrots to the sheet and drizzle with the honey garlic sauce. Toss to coat.
- Bake for about 25-30 minutes, stirring halfway through, until veggies are tender and kielbasa is caramelized.
- Sprinkle with fresh parsley or green onions before serving hot.
Notes
You can swap in turkey kielbasa or other proteins, and add extra veggies like spinach or broccoli as desired.
