Description

Soft, chewy oatmeal cookies sandwiched with creamy marshmallow frosting, these Oatmeal Cream Pies are a nostalgic treat perfect for fall.


Ingredients

  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 cups old-fashioned oats
  • 1 cup marshmallow fluff
  • 1/2 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-5 minutes.
  3. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract.
  4. Combine the flour, baking soda, cinnamon, and salt in another bowl. Gradually add this dry mixture to the creamed mixture, blending until just combined.
  5. Stir in the old-fashioned oats until evenly distributed.
  6. Drop spoonfuls of dough onto the prepared baking sheets, spacing them apart.
  7. Bake for 10-12 minutes until golden brown. Let the cookies cool on the baking sheet.
  8. Beat together the marshmallow fluff and powdered sugar until smooth and creamy.
  9. Spread frosting on one cookie and sandwich it with another. Repeat with remaining cookies.
