Description

A vibrant summer salad featuring grilled nectarines, creamy burrata, and savory prosciutto, perfect for gatherings or weeknight dinner.

Ingredients

Scale
  • 2 ripe nectarines
  • 1 ball of fresh burrata cheese
  • 4 slices of prosciutto
  • 2 cups mixed greens (spinach, arugula, or your favorite salad mix)
  • ¼ cup balsamic glaze
  • Olive oil for drizzling
  • Salt and pepper to taste
  • Optional: chopped herbs (basil or mint for garnish)

Instructions

  1. Preheat the grill to medium-high.
  2. Prepare the nectarines by cutting them in half and removing the pit. Brush with olive oil and sprinkle with salt.
  3. Grill the nectarines face down for 3-4 minutes until tender.
  4. Assemble the salad by laying down the mixed greens, tearing the prosciutto, and scattering it over the greens.
  5. Add the burrata in the center of the salad.
  6. Finish with grilled nectarines arranged around the salad.
  7. Garnish with balsamic glaze, black pepper, and optional fresh herbs. Serve immediately.

Notes

Make-ahead by prepping components in advance, but assemble right before serving for the best flavor. Consider different fruits or toppings for variation.
