- 1 cup lentils
- 2 carrots, diced
- 1/4 cup mixed herbs (parsley, cilantro, mint)
- 1/2 cup nuts (almonds, walnuts, or your choice)
- 1/2 cup olives, pitted and sliced
- 1/4 cup raisins
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Start by rinsing the lentils under cold water. In a pot, cook them in boiling water until they become tender, which takes about 20-25 minutes. Once they’re ready, drain them and let them cool.
- In a large bowl, combine the cooled lentils, diced carrots, lovely mixed herbs, crunchy nuts, tangy olives, and sweet raisins.
- In a separate small bowl, whisk together the olive oil, zesty lemon juice, earthy cumin, smoky paprika, salt, and pepper to create a dressing.
- Pour the dressing over the salad and toss gently to ensure every ingredient gets coated.
- For the best flavor, serve immediately, or let it chill in the refrigerator for about 30 minutes to allow the flavors to meld together.
Notes
This salad stores wonderfully in the fridge and can be prepared the day before serving. Feel free to swap the nuts or add seeds for a different crunch.
