Description

A quick and easy Mediterranean Pasta Salad, bursting with fresh flavors and perfect for warm weather gatherings.


Ingredients

  • 8 ounces pasta (fusilli or penne)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1 cup Kalamata olives, pitted and halved
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
  3. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper to make the vinaigrette.
  4. Pour the vinaigrette over the salad and toss to combine.
  5. Serve chilled or at room temperature.

Notes

This salad can be made ahead and stored in the fridge for up to 3 days, and it tastes even better the next day.
