- 2 pounds potatoes, peeled and cubed
- 1/2 cup milk
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese
- 1/4 cup butter
- 1 cup crispy turkey bacon, crumbled
- Salt and pepper to taste
- Green onions for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- Boil the potatoes in a large pot until tender. Drain and return to the pot.
- Add milk, sour cream, cream cheese, butter, and season with salt and pepper. Mash until smooth and creamy.
- Stir in half of the cheddar cheese and half of the crumbled turkey bacon.
- Transfer the mixture into a greased baking dish, spreading it evenly.
- Top with the remaining cheddar cheese and turkey bacon.
- Bake in the preheated oven for about 25-30 minutes, or until the cheese is bubbly and golden.
- Garnish with green onions before serving.
Notes
Make it ahead of time and store it in the fridge for up to a day before baking. Leftovers store well in an airtight container for up to 3-4 days.
