Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth or water
  • 1 can chickpeas, drained and rinsed
  • 1 lemon (juice and zest)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh herbs (e.g., parsley or cilantro) for garnish

Instructions

  1. Rinse the quinoa under cold water. In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and let it simmer for about 15 minutes until fluffy.
  2. Combine the cooked quinoa and chickpeas in a large bowl.
  3. Whisk together lemon juice, zest, olive oil, garlic powder, parsley, oregano, salt, and pepper in a small bowl.
  4. Pour the dressing over the quinoa and chickpeas, and toss gently.
  5. Garnish with fresh herbs if desired, and serve either warm or chilled.
