Ingredients
Scale
- 8 ounces of orzo pasta
- 1 pound of fresh shrimp, peeled and deveined
- 2 tablespoons of olive oil
- 4 cloves of garlic, minced
- Zest and juice of 1 lemon
- 3 cups of fresh spinach
- 1/2 cup of vegetable broth
- Salt and pepper to taste
- Grated Parmesan cheese for serving (optional)
- Fresh parsley for garnish (optional)
Instructions
- Cook the orzo: Bring a large pot of salted water to a boil. Add the orzo and cook according to package instructions until al dente. Drain and set aside.
- Sauté the shrimp: In a large skillet, heat olive oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the shrimp, season with salt and pepper, and cook for about 2-3 minutes per side or until they are pink and opaque.
- Add flavor: Once the shrimp are cooked, stir in the lemon zest and juice, followed by the vegetable broth. Bring to a gentle simmer.
- Incorporate the spinach: Add the spinach to the skillet and stir until wilted, about 1-2 minutes.
- Combine ingredients: Add the cooked orzo to the skillet, stirring gently to combine everything and allow the orzo to soak up the flavorful sauce. Cook for an additional minute or two.
- Serve: Spoon the lemon garlic shrimp and orzo into bowls, top with grated Parmesan cheese and freshly chopped parsley if desired. Enjoy the warmth and comfort in every bite!
