- 1 cup powdered sugar
- 1 T key lime juice
- 1 T milk
- ¼ tsp vanilla
- Pinch of salt (optional)
- ½ tsp key lime zest
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the softened butter, regular sugar, and light brown sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until combined.
- Incorporate the key lime zest, adjusting to taste.
- Combine the flour, baking soda, and salt in a separate bowl, then add to the wet ingredients and mix until just combined.
- Scoop the dough onto a parchment-lined baking sheet, spacing about 2 inches apart.
- Bake for 10-12 minutes until edges are golden and centers are soft.
- Prepare the icing by whisking together powdered sugar, key lime juice, milk, vanilla, pinch of salt, and additional lime zest.
- Ice the cooled cookies and enjoy immediately.
