Description

Ingredients

  • 2 medium zucchinis
  • 1 cup almond flour
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Preheat your oven to 425°F (220°C) if baking. Line a baking sheet with parchment paper.
  2. Cut the zucchinis into thin strips resembling fries.
  3. In a bowl, mix together the almond flour, Parmesan cheese, garlic powder, salt, and pepper until well combined.
  4. In another bowl, whisk the eggs until they’re frothy.
  5. Dip each zucchini strip into the egg, allowing any excess to drip off, then roll it in the almond flour mixture until fully coated.
  6. For baking: Place the coated zucchini fries on the prepared baking sheet and spray them lightly with oil. Bake for about 20 minutes or until golden and crispy.
  7. For frying: Heat oil in a skillet over medium heat and fry the zucchini fries for about 3-5 minutes on each side, or until golden brown.
