Ingredients

  • 1 pound ground beef
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup almond flour
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup unsalted butter
  • 2 cloves garlic, minced (for sauce)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the ground beef, Parmesan cheese, almond flour, egg, minced garlic, Italian seasoning, salt, and pepper in a large bowl. Mix well until fully incorporated.
  3. Form the mixture into small meatballs and place them on a baking sheet lined with parchment paper.
  4. Bake for 18-20 minutes or until cooked through and golden on the outside.
  5. Melt the unsalted butter in a skillet over medium heat. Add minced garlic and sauté until fragrant, about a minute or two.
  6. Add the baked meatballs to the skillet and gently toss them in the garlic butter sauce until nicely coated.
  7. Garnish with fresh chopped parsley before serving.
