Description

A healthy low-carb twist on zucchini boats filled with tender chicken and melted cheese, perfect for a cozy weeknight dinner.


Ingredients

Scale
  • 1 lb ground chicken
  • 3 large zucchinis (or 4 small)
  • 2 cups marinara or pasta sauce
  • 3 cups freshly shredded mozzarella
  • 1 cup shredded parmesan
  • Salt, pepper, and garlic powder to taste

Instructions

  1. Cook the ground chicken in a large skillet over medium heat until it’s no longer pink. Season with salt, pepper, and garlic powder.
  2. Mix in about 2 cups of marinara sauce with the chicken. Let it simmer on low heat.
  3. Preheat your oven to 400 degrees and grease a 9×13 baking dish.
  4. Cut the zucchinis in half lengthwise and carve out the insides to create boats.
  5. Stir in 2 cups of shredded mozzarella and ½ cup of parmesan into the chicken mixture until melted.
  6. Spoon the mixture into the hollowed zucchini boats and sprinkle the remaining cheeses over the top.
  7. Bake uncovered for 25 minutes, then broil for a few minutes to achieve a golden finish.
