A healthy low-carb twist on zucchini boats filled with tender chicken and melted cheese, perfect for a cozy weeknight dinner.
Ingredients

- 1 lb ground chicken
- 3 large zucchinis (or 4 small)
- 2 cups marinara or pasta sauce
- 3 cups freshly shredded mozzarella
- 1 cup shredded parmesan
- Salt, pepper, and garlic powder to taste
Instructions
- Cook the ground chicken in a large skillet over medium heat until it’s no longer pink. Season with salt, pepper, and garlic powder.
- Mix in about 2 cups of marinara sauce with the chicken. Let it simmer on low heat.
- Preheat your oven to 400 degrees and grease a 9×13 baking dish.
- Cut the zucchinis in half lengthwise and carve out the insides to create boats.
- Stir in 2 cups of shredded mozzarella and ½ cup of parmesan into the chicken mixture until melted.
- Spoon the mixture into the hollowed zucchini boats and sprinkle the remaining cheeses over the top.
- Bake uncovered for 25 minutes, then broil for a few minutes to achieve a golden finish.
