A comforting and low-carb twist on a classic mac and cheese using cauliflower, ground beef, and creamy cheeses.

- 1 head cauliflower, cut into florets
- 1 pound ground beef
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese
- 1/2 cup beef broth
- 1 tablespoon mustard
- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste
- Optional toppings: pickles, diced onions, tomatoes
Instructions
- Preheat oven to 350°F (175°C).
- Brown ground beef in a large skillet over medium heat; drain fat.
- Add beef broth, mustard, Worcestershire sauce, salt, and pepper; simmer for 5 minutes.
- Steam cauliflower florets until tender, about 10 minutes.
- Combine steamed cauliflower, cream cheese, and half of the cheddar cheese in a large bowl; mix until creamy.
- Stir in the beef mixture into the cauliflower mixture.
- Transfer to a baking dish and sprinkle remaining cheddar cheese on top.
- Bake for 20-25 minutes, or until cheese is bubbly and golden.
- Serve hot and top with optional toppings if desired.
Notes
Great for meal prep; can be stored in the fridge for up to 3 days. Reheat in the oven for optimal cheesiness.
