Description

A timeless recipe for canning fresh green beans, preserving their crisp flavor for year-round enjoyment.

Ingredients

  • Fresh green beans
  • Salt (1 teaspoon per jar)
  • Water (boiling)

Instructions

  1. Wash and trim the green beans. Start by rinsing your fresh green beans under cool water, then trim off the tips.
  2. Prepare the pressure canner according to the manufacturer’s instructions.
  3. Pack the green beans into sterilized jars, leaving about an inch of headspace.
  4. Add 1 teaspoon of salt to each jar if desired.
  5. Fill jars with boiling water, maintaining the headspace.
  6. Wipe the rims of the jars clean and place the lids on securely.
  7. Process the jars in the pressure canner at the recommended pressure for the appropriate time.
  8. Once done, allow the canner to release pressure naturally.
  9. Remove jars and let them cool completely before storing.

Notes

For variations, try adding herbs, minced garlic, or spices for extra flavor.
