Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 cups mixed vegetables (carrots, celery, bell peppers)
  • 4 cups vegetable or chicken broth
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)

Instructions

  1. In a large pot over medium heat, cook the sausage until browned and crispy.
  2. Add the chopped onion and minced garlic, sautéing until the onion is translucent and aromatic, about 3-4 minutes.
  3. Stir in the colorful mixed vegetables and cook for another 5 minutes, letting the veggies soften just a bit.
  4. Pour in the broth and add the rinsed beans, then bring the mixture to a gentle boil.
  5. Once boiling, reduce the heat and let it simmer for about 15 minutes, allowing all the flavors to meld beautifully.
  6. Stir in the heavy cream, and season generously with salt and pepper to taste.
  7. Serve hot, garnished with fresh herbs if desired.
