- 2 cans (15 oz each) white beans, drained and rinsed
- 1 cup heavy cream

Instructions
- In a large pot over medium heat, cook the sausage until browned and crispy.
- Add the chopped onion and minced garlic, sautéing until the onion is translucent and aromatic, about 3-4 minutes.
- Stir in the colorful mixed vegetables and cook for another 5 minutes, letting the veggies soften just a bit.
- Pour in the broth and add the rinsed beans, then bring the mixture to a gentle boil.
- Once boiling, reduce the heat and let it simmer for about 15 minutes, allowing all the flavors to meld beautifully.
- Stir in the heavy cream, and season generously with salt and pepper to taste.
