Ingredients

- 1 large whole wheat wrap
- 1 zucchini, sliced
- 1 bell pepper, sliced
- 1 red onion, sliced
- 1 cup mushrooms, sliced
- 1 cup spinach
- 2 tablespoons olive oil
- Salt and pepper to taste
- ¼ cup hummus or tzatziki for spreading
- Fresh herbs (parsley, basil) for garnish
Instructions
- Preheat the grill to medium heat.
- Toss the sliced zucchini, bell pepper, red onion, and mushrooms in a bowl with olive oil, salt, and pepper.
- Place the veggies on the grill and let them sizzle for about 5–7 minutes, turning occasionally.
- Spread a generous layer of hummus or tzatziki on the whole wheat wrap.
- Layer the grilled veggies and fresh spinach onto the wrap.
- Sprinkle with fresh herbs and roll up the wrap tightly.
- Slice the wrap in half and serve immediately.
Notes
Grill a batch of veggies in advance and store them in the fridge for quick assembly up to 3 days.
