Description

A vibrant wrap packed with grilled seasonal veggies and zesty flavors, perfect for an easy dinner or satisfying lunch.


Ingredients

Scale
  • 1 large whole wheat wrap
  • 1 zucchini, sliced
  • 1 bell pepper, sliced
  • 1 red onion, sliced
  • 1 cup mushrooms, sliced
  • 1 cup spinach
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • ¼ cup hummus or tzatziki for spreading
  • Fresh herbs (parsley, basil) for garnish

Instructions

  1. Preheat the grill to medium heat.
  2. Toss the sliced zucchini, bell pepper, red onion, and mushrooms in a bowl with olive oil, salt, and pepper.
  3. Place the veggies on the grill and let them sizzle for about 5–7 minutes, turning occasionally.
  4. Spread a generous layer of hummus or tzatziki on the whole wheat wrap.
  5. Layer the grilled veggies and fresh spinach onto the wrap.
  6. Sprinkle with fresh herbs and roll up the wrap tightly.
  7. Slice the wrap in half and serve immediately.

Notes

Grill a batch of veggies in advance and store them in the fridge for quick assembly up to 3 days.
