Description

A vibrant summer meal featuring grilled chicken, fresh vegetables, and creamy avocado on a fluffy bed of orzo.


Ingredients

  • 1 cup uncooked orzo
  • 2 grilled chicken breasts, sliced
  • 1 ripe avocado, diced
  • ½ cup cherry tomatoes, halved
  • ⅓ cup feta cheese, crumbled
  • ¼ cup red onion, thinly sliced
  • 2 tbsp chopped fresh cilantro or parsley
  • 1 tbsp olive oil (for grilling chicken)
  • Salt and pepper to taste
  • ¼ cup extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp honey or maple syrup
  • 1 garlic clove, finely minced
  • Salt and pepper to taste

Instructions

  1. Begin by boiling salted water in a large pot. Cook the orzo according to the package instructions, about 8-10 minutes. Once done, drain and rinse it with cold water to stop the cooking process. Set aside.
  2. While the orzo is cooking, season the chicken breasts with olive oil, salt, and pepper. Grill them over medium heat for 5-6 minutes per side or until cooked through. Let the chicken rest for a few minutes before slicing.
  3. In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, lemon juice, Dijon mustard, honey or maple syrup, minced garlic, and salt and pepper until emulsified.
  4. In a large mixing bowl, combine the cooked orzo, sliced grilled chicken, diced avocado, halved cherry tomatoes, thinly sliced red onion, crumbled feta cheese, and the chopped herbs.
  5. Pour the dressing over the salad, then gently toss everything together until well combined.
  6. For the best flavor, refrigerate the salad for 20-30 minutes to allow flavors to meld before serving.

Notes

This salad can be made ahead and stored in the fridge for up to 3 days. Dress it just before serving for the best flavor.
