Description

A comforting bowl of pasta infused with vibrant basil and spinach, rich nuts, and creamy Parmesan cheese, perfect for any occasion.


Ingredients

Scale
  • 8 ounces pasta of your choice
  • 1 cup fresh basil leaves
  • 1/2 cup fresh spinach leaves
  • 1/4 cup pine nuts or walnuts
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste
  • Cherry tomatoes (for garnish, optional)
  • Pine nuts (for garnish, optional)

Instructions

  1. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. Combine the basil, spinach, nuts, Parmesan, and garlic in a food processor. Pulse until finely chopped.
  3. Drizzle in the olive oil while running the food processor until the mixture is smooth and creamy.
  4. Season with salt and pepper to taste.
  5. Combine the cooked pasta and pesto in a large bowl, tossing until well coated.
  6. Serve garnished with cherry tomatoes and additional pine nuts if desired.

Notes

Make the pesto in advance and store it in the fridge for up to a week. Leftovers can be stored in an airtight container for up to three days.
