Ingredients

- 8 ounces pasta of your choice
- 1 cup fresh basil leaves
- 1/2 cup fresh spinach leaves
- 1/4 cup pine nuts or walnuts
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic
- 1/4 cup extra virgin olive oil
- Salt and pepper to taste
- Cherry tomatoes (for garnish, optional)
- Pine nuts (for garnish, optional)
Instructions
- Cook the pasta according to the package instructions until al dente. Drain and set aside.
- Combine the basil, spinach, nuts, Parmesan, and garlic in a food processor. Pulse until finely chopped.
- Drizzle in the olive oil while running the food processor until the mixture is smooth and creamy.
- Season with salt and pepper to taste.
- Combine the cooked pasta and pesto in a large bowl, tossing until well coated.
- Serve garnished with cherry tomatoes and additional pine nuts if desired.
Notes
Make the pesto in advance and store it in the fridge for up to a week. Leftovers can be stored in an airtight container for up to three days.
