This comforting home-cooked meal features garlic herb chicken served with creamy mashed potatoes and glazed carrots, perfect for any weeknight dinner.

- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 pounds potatoes, peeled and cubed
- 1/2 cup milk
- 4 tablespoons butter
- 4 cups carrots, sliced
- 2 tablespoons brown sugar
- 1 tablespoon butter
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat. Add garlic, thyme, rosemary, salt, and pepper, and cook until fragrant.
- Add the chicken breasts to the skillet and sear on both sides until golden brown. Transfer to a baking dish and bake for 20-25 minutes, or until the chicken is cooked through.
- Boil the potatoes in salted water until tender. Drain and return to the pot. Add milk and butter, and mash until creamy.
- Melt the remaining butter in a separate pan and add the sliced carrots. Sprinkle with brown sugar, and sauté until tender and glazed.
- Serve the chicken alongside the creamy mashed potatoes and glazed carrots.
