A tender and juicy roasted chicken infused with garlic herb butter, perfect for family dinners and special occasions.
Ingredients

- 1 whole chicken
- 1/2 cup unsalted butter, softened
- 4 cloves garlic, minced
- 2 lemons, zested and juiced
- 2 teaspoons fresh thyme, chopped
- 2 teaspoons fresh rosemary, chopped
- Salt and pepper to taste
- 1 onion, quartered
- 2–3 sprigs fresh parsley
Instructions
- Preheat the oven to 425°F (220°C).
- Mix the softened butter with minced garlic, lemon zest, lemon juice, thyme, rosemary, salt, and pepper until well combined.
- Pat the chicken dry with paper towels and place it in a roasting pan.
- Gently separate the skin from the chicken breast and rub some of the garlic herb butter mixture directly onto the meat for maximum flavor.
- Spread the remaining mixture all over the outside of the chicken, coating it lovingly.
- Stuff the cavity of the chicken with quartered onion and a few sprigs of parsley for a fresh taste.
- Tie the legs together with kitchen twine to keep everything together as it roasts.
- Roast the chicken in the preheated oven for about 75 minutes or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 10-15 minutes before carving and serving, allowing the juices to settle into the meat.
Notes
You can prepare the garlic herb butter a day in advance. Always allow the chicken to rest after roasting for juicier meat.
