Description

A cozy weeknight meal featuring tender steak bites marinated in a savory garlic and balsamic glaze, served alongside roasted baby potatoes and green beans.


Ingredients

  • 2 lb lean steak (trimmed & cubed into 1-inch pieces)
  • 1 tbsp olive oil
  • 2 tbsp soy sauce
  • 2 tbsp balsamic vinegar
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tbsp garlic powder
  • ¼ tsp crushed red pepper (optional)
  • 3 cloves garlic (minced)
  • 2 tbsp balsamic vinegar
  • 2 tbsp low-sodium beef broth
  • 1 tsp honey
  • 1 tbsp soy sauce
  • 1.5 lb baby gold potatoes (quartered)
  • ½ tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tbsp garlic powder
  • 1 tsp paprika
  • 12 oz fresh green beans (trimmed)
  • ½ tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tbsp garlic powder

Instructions

  1. Marinate the steak: In a large bowl, combine the cubed steak, 1 tbsp olive oil, 2 tbsp soy sauce, 2 tbsp balsamic vinegar, ½ tsp salt, ½ tsp black pepper, ½ tbsp garlic powder, and crushed red pepper (if using). Toss to coat the steak. Cover and allow it to marinate for at least 30 minutes, or up to overnight for richer flavors.
  2. Season & roast the veggies: Preheat your oven to 400°F (200°C). On a large baking sheet, toss the quartered baby gold potatoes with ½ tbsp olive oil, ½ tsp salt, ½ tsp black pepper, ½ tbsp garlic powder, and 1 tsp paprika. Spread them out in a single layer and roast for 25-30 minutes, until tender and golden.
  3. Sear the steak bites: While the veggies roast, heat a large skillet over medium-high heat. Add the marinated steak bites in batches (you don’t want to overcrowd the pan!) and sear them for about 2-3 minutes on each side, until a lovely brown crust forms. Remove them from the skillet and set aside.
  4. Make the glaze: In the same skillet, add the 3 cloves of minced garlic and sauté for about 30 seconds until fragrant. Stir in the remaining 2 tbsp balsamic vinegar, 2 tbsp beef broth, 1 tsp honey, and 1 tbsp soy sauce. Allow the mixture to simmer for a few minutes until it thickens slightly.
  5. Assemble bowls: Add the seared steak bites back into the skillet, coating them in the glaze. On a plate, serve the roasted baby gold potatoes and the steak bites. Pre-cook the green beans to your liking, then toss them with ½ tbsp olive oil, ½ tsp salt, ½ tsp black pepper, and ½ tbsp garlic powder before adding them to your bowls.

Notes

Consider adding a splash of orange juice or zest to your marinade for a refreshing twist. Chicken or turkey can also be substituted for a lighter version.
