Description

Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 2 tablespoons black pepper
  • 1/4 cup soy sauce
  • 2 tablespoons cornstarch
  • 2 tablespoons vegetable oil
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 cup chicken broth
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • 1 tablespoon green onions, chopped (for garnish)

Instructions

  1. Marinate the Chicken: In a bowl, combine the chicken pieces with soy sauce, black pepper, and cornstarch. Let it marinate for 30 minutes to soak in those flavors.
  2. Heat the Oil: In a skillet, heat vegetable oil over medium-high heat until shimmering.
  3. Cook the Chicken: Add the marinated chicken to the skillet. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  4. Add Veggies: Toss in the sliced bell pepper, onion, garlic, and ginger. Stir-fry for another 3-4 minutes until the veggies are tender-crisp and vibrant.
  5. Create the Sauce: Pour in the chicken broth and let it simmer for a few minutes, allowing the sauce to thicken and envelop the chicken and veggies.
  6. Garnish & Serve: Remove from heat and garnish with chopped green onions. Serve the hearty mixture hot over a bed of fluffy rice.

Notes

Prepare the chicken with the marinade the night before for deeper flavor. Store leftovers in an airtight container in the fridge for up to 3 days.
