- 1/4 cup soy sauce
- 2 tablespoons cornstarch
- 2 tablespoons vegetable oil
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 cup chicken broth
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- 1 tablespoon green onions, chopped (for garnish)
Instructions
- Marinate the Chicken: In a bowl, combine the chicken pieces with soy sauce, black pepper, and cornstarch. Let it marinate for 30 minutes to soak in those flavors.
- Heat the Oil: In a skillet, heat vegetable oil over medium-high heat until shimmering.
- Cook the Chicken: Add the marinated chicken to the skillet. Cook until the chicken is browned and cooked through, about 5-7 minutes.
- Add Veggies: Toss in the sliced bell pepper, onion, garlic, and ginger. Stir-fry for another 3-4 minutes until the veggies are tender-crisp and vibrant.
- Create the Sauce: Pour in the chicken broth and let it simmer for a few minutes, allowing the sauce to thicken and envelop the chicken and veggies.
- Garnish & Serve: Remove from heat and garnish with chopped green onions. Serve the hearty mixture hot over a bed of fluffy rice.
