- 2 cups cooked chicken, shredded
- 1 cup rice, uncooked
- 2 cups chicken broth
- 1 can black beans, drained
- 1 cup corn
- 1 cup salsa
- 1 cup shredded cheese
- 1 teaspoon taco seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the cooked chicken, rice, chicken broth, black beans, corn, salsa, taco seasoning, salt, and pepper in a large baking dish.
- Mix well and spread evenly in the dish.
- Cover with foil and bake for 40 minutes.
- Remove the foil, sprinkle cheese on top, and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
- Let cool for a few minutes before serving.
Notes
This casserole can be made ahead of time and stored in the fridge. It also freezes well for future meals.
