Description

A comforting and creamy white chicken chili that’s perfect for cozy family dinners.


Ingredients

Scale
  • 1 lb shredded boneless skinless chicken breasts
  • 1 can corn (drained)
  • 1 can black beans (drained and rinsed)
  • 1 can diced tomatoes (with juice)
  • 8 oz cream cheese
  • 1 onion (diced)
  • 1 packet chili seasoning
  • 2 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. Combine the chicken, corn, black beans, diced tomatoes, onion, and chili seasoning in a crockpot.
  2. Pour in the chicken broth and stir to mix well.
  3. Cook on low for 360-480 minutes (6-8 hours) or on high for 240 minutes (4 hours).
  4. Add the cream cheese about 30 minutes before serving and stir until melted and smooth.
  5. Season with salt and pepper to taste.
  6. Serve warm and enjoy!

Notes

Can be made ahead and stored for up to 4 days in the fridge. Leftovers freeze well, too.
