Instructions
- Combine the diced sweet potatoes, black beans, diced tomatoes, chopped onion, and minced garlic in a crock pot.
- Pour in the vegetable broth and add cumin, chili powder, salt, and pepper.
- Stir to combine all ingredients, allowing the flavors to mingle together.
- Cover and cook on low for 360-480 minutes or on high for 180-240 minutes, until the sweet potatoes are tender and infused with flavor.
- Serve hot, topped with creamy avocado, fresh cilantro, and a squeeze of lime for that extra zing!
