Description

Delicious and crispy zucchini fritters, perfect for a quick meal or snack.


Ingredients

Scale
  • 2 medium zucchinis, grated
  • 1 cup breadcrumbs (gluten-free if needed)
  • 1/4 cup grated Parmesan cheese (dairy-free if needed)
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 large egg (flax egg for vegan option)
  • Salt and pepper to taste
  • Olive oil for baking or frying

Instructions

  1. Preheat the oven to 400°F (200°C) or prepare your air fryer.
  2. Grate the zucchinis and squeeze out excess moisture using a clean kitchen towel.
  3. Combine the grated zucchini, breadcrumbs, cheese, parsley, garlic, egg, salt, and pepper in a mixing bowl.
  4. Mix until all the ingredients are well combined.
  5. Form the mixture into fritters and place them on a parchment-lined baking sheet or in the air fryer basket.
  6. Drizzle with olive oil if baking or spray with cooking spray for air frying.
  7. Bake for 20-25 minutes or air fry for 10-12 minutes until golden and crispy, flipping halfway through.
  8. Serve warm with your favorite dip.

Notes

Squeeze out moisture from the zucchini to prevent soggy fritters. Store leftovers in an airtight container for up to 3 days.
