- 2 medium zucchinis, grated
- 1 cup breadcrumbs (gluten-free if needed)
- 1/4 cup grated Parmesan cheese (dairy-free if needed)
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- 1 large egg (flax egg for vegan option)
- Salt and pepper to taste
- Olive oil for baking or frying
Instructions
- Preheat the oven to 400°F (200°C) or prepare your air fryer.
- Grate the zucchinis and squeeze out excess moisture using a clean kitchen towel.
- Combine the grated zucchini, breadcrumbs, cheese, parsley, garlic, egg, salt, and pepper in a mixing bowl.
- Mix until all the ingredients are well combined.
- Form the mixture into fritters and place them on a parchment-lined baking sheet or in the air fryer basket.
- Drizzle with olive oil if baking or spray with cooking spray for air frying.
- Bake for 20-25 minutes or air fry for 10-12 minutes until golden and crispy, flipping halfway through.
- Serve warm with your favorite dip.
Notes
Squeeze out moisture from the zucchini to prevent soggy fritters. Store leftovers in an airtight container for up to 3 days.
