Description

A delightful creamy salmon dish with vibrant spinach and tangy sun-dried tomatoes, perfect for cozy dinners.


Ingredients

Scale
  • 2 salmon fillets
  • 2 cups fresh spinach
  • 1/4 cup sun-dried tomatoes, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons butter
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese, grated
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. In a skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds.
  2. Toss in the sun-dried tomatoes and cook for a couple of minutes.
  3. Stir in the fresh spinach and watch it wilt, turning a vibrant green.
  4. Pour in the heavy cream and sprinkle in the parmesan cheese. Stir gently until the sauce thickens.
  5. Season with salt and pepper to taste.
  6. Gently place the salmon fillets into the sauce and cook until opaque and flaky. Serve warm.

Notes

Make the sauce in advance and reheat when ready, adding cooked salmon at the end for easy serving.
