Ingredients

- 8 oz pasta
- 1 lb salmon fillet
- 3 cups fresh spinach
- 1 cup heavy cream
- 2 cloves garlic, minced
- Salt and pepper to taste
- Grated Parmesan cheese for serving
- Olive oil
Instructions
- Cook pasta according to package instructions; drain and set aside, leaving it slightly al dente.
- In a skillet, heat a splash of olive oil over medium heat. Season the salmon with salt and pepper and cook for approximately 4-5 minutes on each side, until cooked through. Remove and set aside to cool.
- Add minced garlic to the same skillet and sauté until fragrant.
- Pour in the heavy cream and bring to a gentle simmer. Stir in the fresh spinach and wilt until tender.
- Flake the cooked salmon and add to the skillet with the drained pasta. Toss everything together until combined.
- Serve hot, topped with a sprinkle of grated Parmesan cheese.
Notes
For a zesty twist, add lemon juice and zest. Substitute shrimp or other veggies as desired. Store leftovers in the fridge for up to 3 days.
