Description

A cozy weeknight dinner featuring flaky salmon, vibrant spinach, and creamy sauce enveloping tender pasta.


Ingredients

Scale
  • 8 oz pasta
  • 1 lb salmon fillet
  • 3 cups fresh spinach
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving
  • Olive oil

Instructions

  1. Cook pasta according to package instructions; drain and set aside, leaving it slightly al dente.
  2. In a skillet, heat a splash of olive oil over medium heat. Season the salmon with salt and pepper and cook for approximately 4-5 minutes on each side, until cooked through. Remove and set aside to cool.
  3. Add minced garlic to the same skillet and sauté until fragrant.
  4. Pour in the heavy cream and bring to a gentle simmer. Stir in the fresh spinach and wilt until tender.
  5. Flake the cooked salmon and add to the skillet with the drained pasta. Toss everything together until combined.
  6. Serve hot, topped with a sprinkle of grated Parmesan cheese.

Notes

For a zesty twist, add lemon juice and zest. Substitute shrimp or other veggies as desired. Store leftovers in the fridge for up to 3 days.
