Description

A deliciously creamy potato salad, perfect for summer gatherings or potlucks, that brings back childhood memories.


Ingredients

  • 2 pounds of potatoes
  • 1 cup mayonnaise
  • 1 tablespoon mustard
  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 1/4 cup chopped relish
  • Salt and pepper to taste
  • 2 hard-boiled eggs, chopped (optional)

Instructions

  1. Boil the potatoes in salted water until tender. Drain and let cool.
  2. In a large bowl, mix together mayonnaise, mustard, celery, onion, relish, salt, and pepper.
  3. Once cooled, peel and chop the potatoes, then add to the mixture.
  4. If using, stir in the chopped hard-boiled eggs for an extra layer of creaminess and richness.
  5. Mix until well combined, letting all those lovely flavors meld together.
  6. Chill in the refrigerator for at least 60 minutes before serving to let the flavors develop fully.
