Ingredients

- 2 pounds of potatoes
- 1 cup mayonnaise
- 1 tablespoon mustard
- 1/2 cup chopped celery
- 1/2 cup chopped onion
- 1/4 cup chopped relish
- Salt and pepper to taste
- 2 hard-boiled eggs, chopped (optional)
Instructions
- Boil the potatoes in salted water until tender. Drain and let cool.
- In a large bowl, mix together mayonnaise, mustard, celery, onion, relish, salt, and pepper.
- Once cooled, peel and chop the potatoes, then add to the mixture.
- If using, stir in the chopped hard-boiled eggs for an extra layer of creaminess and richness.
- Mix until well combined, letting all those lovely flavors meld together.
- Chill in the refrigerator for at least 60 minutes before serving to let the flavors develop fully.
