- 1 package of gnocchi
- 1 medium butternut squash, peeled and diced
- 1 lb Italian sausage, casing removed
- 2 tablespoons olive oil
- 1 onion, chopped
- 2–3 cloves garlic, minced
- 1 cup heavy cream
- 1 teaspoon fresh thyme, chopped
- 1 teaspoon fresh sage, chopped
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and minced garlic, sautéing until softened and fragrant.
- Add the sausage to the skillet, breaking it apart with a spatula, and cook until browned.
- Stir in the diced butternut squash and cook for about 10 minutes, until it starts to soften.
- Add the gnocchi to the skillet and stir well to combine all the ingredients.
- Pour in the heavy cream, adding the fresh thyme and sage. Stir to combine all the flavors.
- Cook for another 5-7 minutes, until heated through and the sauce slightly thickens.
- Season with salt and pepper to taste.
- Serve hot, topped generously with freshly grated Parmesan cheese.
Notes
This recipe can be prepared ahead of time for easy weeknight dinners. You can also substitute turkey sausage or use plant-based cream for a lighter or dairy-free option.
