- 4 cod fillets (about 6 oz. each)
- 4 medium potatoes, peeled and diced
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 teaspoon dried rosemary (or 1 tablespoon fresh rosemary, chopped)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Prepare the Ingredients: Peel and dice your potatoes, chop the onion and garlic, and season your cod fillets with salt and pepper.
- Cook the Potatoes: In a large pot, bring salted water to a boil. Add the diced potatoes and cook for about 10-12 minutes, or until fork-tender. Drain and set aside.
- Sauté the Aromatics: In a large skillet, heat olive oil and butter over medium heat. Once melted, add the chopped onions and sauté until they are translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute.
- Make the Cream Sauce: Pour in the heavy cream, and sprinkle in the rosemary. Bring the mixture to a gentle simmer, allowing it to thicken for about 3-4 minutes.
- Add the Cod: Carefully place the seasoned cod fillets into the cream sauce. Cook for about 5 minutes on each side, or until the fish is opaque and flakes easily.
- Combine & Serve: Gently fold in the cooked potatoes and serve hot, garnished with fresh parsley.

For variations, try adding lemon juice, fresh herbs, or vegetables to customize the dish.
