- 4 large bell peppers (any color)
- 1 pound ground beef
- 1 cup cooked rice (white or brown)
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 can diced tomatoes (drained)
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- Sauté the onion and garlic in a skillet until translucent.
- Add the ground beef and cook until browned and crumbled.
- Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
- Fill each bell pepper with the beef and rice mixture.
- Place the stuffed peppers in a baking dish, cover with foil, and bake for 30 minutes.
- Remove the foil, sprinkle cheese on top, and bake for an additional 10 minutes.
- Let cool slightly before serving.
Notes
Make the filling ahead of time and store the stuffed peppers in the refrigerator until ready to bake. Leftovers can be stored in an airtight container for up to three days.
