Description

A warm and comforting cake infused with cinnamon and juicy apple slices, perfect for autumn gatherings.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 3/4 cup unsweetened applesauce
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 cups peeled and diced apples (Granny Smith or Honeycrisp)
  • Topping: 1/3 cup brown sugar
  • Topping: 1 tablespoon cinnamon
  • Topping: 1 cup chopped pecans (optional)

Instructions

  1. Preheat the oven: Start by preheating your oven to 350°F (175°C). Grease a 9×13 baking dish with a bit of vegetable oil or non-stick spray.
  2. Mix the dry ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, and salt until well combined.
  3. Combine wet ingredients: In another bowl, blend the applesauce, vegetable oil, and eggs until smooth.
  4. Combine mixtures: Pour the wet mixture into the dry ingredients and gently stir until just combined, folding in the diced apples.
  5. Prepare for baking: Transfer the batter into your prepared baking dish, smoothing it out evenly.
  6. Make the cinnamon sugar topping: In a small bowl, mix the brown sugar and cinnamon together, sprinkle evenly over the batter, and add pecans if using.
  7. Bake: Place the baking dish in the oven and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool and serve: Allow the cake to cool slightly in the pan before slicing into squares. Serve warm with whipped cream or vanilla ice cream.

Notes

Leftover cake can be stored at room temperature for up to three days or in the refrigerator for a week. Reheat for freshness.
