Description

A comforting cinnamon and apple cake perfect for cozy gatherings, filled with warm flavors and tender chunks of apple.


Ingredients

  • 2 apples, peeled and diced
  • 45g granulated sugar
  • 1 tsp cinnamon
  • 360g plain flour
  • 200g granulated sugar
  • 4 tsp baking powder
  • 300ml whole milk
  • 1 tsp vanilla extract
  • 2 large eggs, lightly beaten
  • 110g unsalted butter, melted
  • 120g unsalted butter, melted (for cinnamon swirl)
  • 150g light brown sugar
  • 2 tbsp cinnamon (for cinnamon swirl)
  • 200g icing sugar (for glaze)
  • 40ml milk (for glaze)

Instructions

  1. Preheat the oven to 170°C (fan). Grease an 8×10” tin.
  2. Combine the diced apples with 45g granulated sugar and 1 tsp cinnamon in a bowl. Set aside for later.
  3. Whisk together the plain flour, 200g granulated sugar, and baking powder until well combined.
  4. Mix the milk, vanilla, and eggs until smooth in a separate bowl. Gradually add this wet mixture to the dry ingredients, stirring until just combined. Fold in the melted butter.
  5. Pour half of the cake batter into the prepared tin, smoothing it out gently.
  6. Spread the apple mixture evenly over the batter.
  7. Mix together the melted butter, light brown sugar, and 2 tbsp cinnamon to create the swirl. Drizzle this mixture over the apples.
  8. Pour the remaining cake batter over the apple and cinnamon layer, spreading it out evenly.
  9. Bake in the preheated oven for 40-45 minutes, or until a skewer inserted in the center comes out clean.
  10. Whisk together the icing sugar and 40ml of milk for the glaze until smooth.
  11. Once the cake has cooled slightly, drizzle the glaze on top. Serve warm for the ultimate experience.

Notes

This cake can be customized with nuts, dried fruits, or chocolate chips. Serve warm with vanilla ice cream or whipped cream.
