- 1 can black beans, rinsed and drained
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 2 cups vegetable broth or water
- 1 tablespoon olive oil
- Salt to taste
- Pepper to taste
Instructions
- In a pot, heat the olive oil over medium heat until it glistens.
- Add the rice, giving it a gentle toast for 1-2 minutes until fragrant.
- Carefully pour in the vegetable broth (or water) and bring to a boil.
- Once boiling, reduce the heat, cover, and let it simmer until the rice is tender and fluffy, about 15-20 minutes.
- When the rice is done, fluff it up with a fork and stir in the black beans, cilantro, lime juice, salt, and pepper.
- Serve warm and enjoy every comforting bite.
Notes
